Es sind Produkte und Speisen, die dem Verbraucher signalisieren, von der Herstellung bis zur Zubereitung kontrolliert zu werden, also Produkte, die einen hohen Qualitätsstandard haben und bei denen sich der Konsument sicher sein kann, etwas für seine Gesundheit und sein Wohlbefinden zu tun. Es sind zugleich die Produkte, deren Bezeichnungen in der Vergangenheit Verwirrung und Unsicherheit beim Verbraucher ausgelöst haben. „Aus ökologischem Anbau“ scheint gleich der Kennzeichnung „aus kontrolliertem Anbau“ zu sein, was jedoch nicht zutrifft, wie nachfolgend u.a. aufgezeigt wird.

Die Boom-artige Entwicklung, die mittlerweile auch Betriebe der Außer-Haus-Verpflegung erreicht hat, wird untersucht und insbesondere die Initiative „1000 Küchen mit Zertifikat“ näher beschrieben. Zielsetzung dieser Initiative ist, in Deutschland 1000 Großküchen mit dem Prädikat „Bio“ zu zertifizieren. Welche Hürden dabei genommen werden müssen und welche Vor- und Nachteile damit verbunden sind, ist wesentlicher Gegenstand dieser Arbeit.
